Potato World dish Soup with vitamin C! A plate brimming with vitamin C is something we can certainly do with. Potatoes and chervil are both rich in vitamins, while garlic builds up our resistance. Preparation time: approximately 20 minutes (plus 20 minutes cooking time). • 400 grams of floury potatoes • 1 large leek • 2 tablespoons of olive oil • 2 cloves of garlic • 1 l of vegetable stock • 1 bunch of chervil • salt, freshly-ground pepper Warm concerning on 180°C Peel the potatoes and cut into small cubes. Wash the leek and slice into thin rings. Heat the olive oil in a soup pan. Press the garlic into the oil and fry on a very slow flame for approximately 1 minute. Add the potato cubes and the leek. Stir and fry until warm, put on the lid and leave to simmer for a few minutes until soft. Add the stock and bring to the boil. Gently boil for 20 minutes. Add 3/4 of the chervil during the last 2 minutes. Blend the soup in a blending machine or with a staff blender and season with salt and pepper. Ladle the soup into bowls and garnish with the remainder of the chervil. Delicious with a piece of toast and fresh herb butter. Tip: In spring, use young nettle tips instead of leek. These are also full of vitamins and minerals!
