Potato World dish Dutch farmhouse tortilla During the harvest, when everyone has to work so much harder, a proper lunch is more than welcome. A farmhouse omelette, for example. You can give it a Spanish touch by adding fried potatoes. It will help all the workers through a long day! Preparation time approximately 20 minutes. • 300 grams potato • 1 tablespoon olive oil • 200 grams cherry tomatoes • 4 eggs • 2 tablespoons chopped parsley • salt, pepper • 50 grams grated farmhouse cheese • 4 thick slices of bread • 4 slices of ham • 8 leaves (mixed) lettuce Peel the potatoes and cut in 1x1 cm cubes. Heat olive oil in a frying pan and fry the potato cubes on high heat for about 7 minutes until just done and brown all around. Cut half the tomatoes in two. Add to the potatoes and fry for more 2 minutes on a high heat. Beat the eggs with the parsley. Season well with salt and pepper. Divide the potato and tomato evenly over the bottom of the pan. Pour the egg mixture over it. Cover with a lid and cook over a low heat for about 7 minutes. Sprinkle with the grated cheese and leave the cheese to melt slightly. Arrange the slices of ham on the slices of bread. Cover with the lettuce. Place a large piece of the tortilla on each slice of bread and garnish with the remaining tomatoes. Tip: Add garlic to the potatoes. Personally, I think this looks really good. But you can also choose to turn the tortilla in the pan with the use of the lid and fry it on 2 sides. In that case, add the cheese afterwards.
