This may be partly true, the health characteristics of the potato are a long way from receiving the appreciation or financial valuation they deserve. Much more attractively shaped than the old wellknown Vitelotte Noir, with a higher yield per hectare. You would think that so much health would be wonderful for the deluxe shelves in the supermarkets. ‘Yes’, is Bus’ answer, ‘it is in the UK, but not in the Netherlands. In big supermarkets, health is still not an issue. Everything is about price here. Cheap is better, is what they all are saying. It is completely different in Britain. The white-fleshed and white-skinned Ilam Hardy contains a total of 76 milligrams of antioxidants per 100 grams of dry matter. In the redskinned and white-fleshed Red Rascal, the total is 95 milligrams per 100 grams of dry matter. If the flesh had been yellow, the figure would without any doubt have been higher. The Purple Heart truffle potato, dark-purple skin with purpleveined flesh, has an antioxidant concentration of 366 milligrams per 100 grams of dry matter and the wild black truffle potato Urenika contains as much as 775 milligrams of antioxidants per 100 grams of dry matter. The Urenika is also known in New Zealand as the Maori potato, which was already being grown by the original inhabitants of the islands hundreds of years ago.
