Gijs is available at Plus supermarkets and supplies various regional products including crisps. With Gijs, the supermarket wants to respond to the desire of consumers for traditional and pure nature. I think this is a very good, practical example how the word sustainability takes shape. It is an extra bonus that customers are even willing to pay more. Despite this obvious example, it still remains vague as to what sustainability really means. The Dutch Ministry of Economic Affairs, Agriculture and Innovation is now actively involved in shaping the sustainability concept. To clarify the concept further, the Ministry has linked sustainability to a few food values. These are: product quality, health, food safety, environmental friendliness, animal welfare, fairness and craftsmanship. A lot of words but still not enough figures. And it is the figures, that it is all about. As an entrepreneur, it is important to know exactly what you are actually supposed to do to supply sustainable products to your customers. In this month’s interview, Professor Haverkort argues that it is important to first get a reliable assessment going. Then you know where you stand and you can adjust your operations with a focus. The need is great. Just as great as producing safe food, argues the Professor.
