Potato World dish Lomo saltado I n the Peruvian kitchen, ‘lomo saltado’ is one of the most traditional dishes. It is a tasty stir-fry dish of marinated beefsteak, vegetables and chips. It is usually served with white rice, but you can also serve it as a main dish with a bit of extra potato. Preparation time approx. 30 minutes (plus 1 hour marinating time). • 4 large, firm potatoes (approx. 750 grams) • 400 grams of beefsteak • 3 tablespoons of red wine • 1 tablespoon of lemon juice • 2 cloves of garlic • 2 shallots • olive oil • 1 tray of cherry tomatoes (250 grams) • freshly ground salt and pepper • 1 small bunch of coriander Slice the beefsteak into thin strips. Place the meat with the red wine and the lemon juice in a bowl. Press the cloves of garlic and add to the meat mixture. Leave to marinate for 1 hour. Peel the potatoes and cut into thin strips (1/2 x 1/2 cm). Peel the shallots (leave the root base in tact) and cut the shallots into segments. Heat a layer of olive oil in a frying pan with a non-stick Teflon layer. Fry the potato strips on a high heat for approx. 10 minutes, turning them regularly until they are done and a pale brown colour. Meanwhile, heat 2 tablespoons of olive oil in a wok. Fry the beef strips on a high heat, continuously turning them for approx. 4 minutes until brown, then pour off any surplus moisture. You can add this to the dish again at a later stage. Add the shallots and fry on a high heat for approx. 2 minutes. Add the tomatoes and fry for another 2 minutes. Season with salt and pepper. Remove potato strips from the frying pan and add them to the wok. Mix well. Sprinkle with chopped coriander and serve immediately. Tip: Very nice with strips of avocado.
