PW-ACTUA HZPC and Rungis are jointly putting colourful Perupas on the market Perupas are potatoes, but not as we know them in Europe. Perupas are ancient. Breeding and trading company HZPC in Joure has the genetic source material of very ancient indigenous potato varieties that are still being grown by the farmers in Peru. Crossing them with European varieties has resulted in colourful ‘ancient’ potatoes, which are now also on the menu of some Dutch restaurants. And this is possible as a result of the unique collaboration between HZPC and catering supplier Rungis in Barendrecht. HZPC and Rungis expect that Perupas will significantly change the regard for and the taste of potato dishes in Dutch restaurants. The ‘WOW! Colourful Perupas’, as they are called, are currently exclusively available at Rungis for professional chefs, according to the catering supplier. ‘With the Perupas, the chefs are able to give free rein to their creativity on the colourful potato palette that Mother Nature has to offer. Perupas not only look splendid, they also taste delicious. Moreover, they have a unique structure and that evokes a wonderful mouth sensation, or rather a lot of taste’, the Rungis website explains. One could almost forget the wonderful colours that nature produces. Fortunately, the farmers in the Andes have been able to preserve a large number of those colours, shapes and tastes in the original potato varieties. ‘Those original tastes and colours of the Andes can be discovered in the Perupas, even on your plate’, says Gert Jan Zonneveld Piek of Rungis. Colourful spectrum According to Zonneveld, it’s a prevailing trend that professional chefs are continuously looking for inspiration, variation and taste. The colourful spectrum of the Perupas potatoes has also aroused their interest. ‘It brings pleasure, variation, taste and health on the plates of chefs and their guests’, according to Zonneveld. Perupas are healthy because they contain a great deal more antioxidants than ordinary potatoes. It is a wonderful product for restaurant guests who, beside a tasty dish, also want healthy food on their plates, according to Rungis. ‘The culinary applications are countless, for example, purple-white crisps, very creamy yellow-orange potato purée and magenta-coloured potato ‘poffertjes’ (tiny pancakes)’, reveals SVH MasterChef (Dutch Guild of MasterChefs) Niels van den Berg. The Perupas range comprises various shapes, colours and tastes. The ‘Magenta Love’ has a lovely, old-rose colour, a light but firm structure and a slight touch of bitterness. And the ‘Violet Queen’, ‘Blue Star’, ‘Violetta’ and ‘Anya’ each have their own colour and taste. The unique cooperation between Rungis and HZPC will provide a continually innovative range of special ancient potato variety flavours and colours, according to the two companies. In addition, in a special collaboration with The Interna tio nal Potato Centre (CIP) in the capital of Lima, HZPC is providing support to a group of farmers in Peru. Thanks to this financial support, these farmers are able to preserve and protect the genetic variation of potato varieties and therefore a source of endless variation, according to Rungis and HZPC. ● Potato World 2015 • number 1 13 Pagina 12
